I Did a Bad Bad Thing

Easy Apple Pecan Sticky Buns

I’m on a low carb diet.

I don’t usually go the diet route when things seem a little snug. I exercise more, cut out the junk and take the slow and easy approach.

But… well… my jeans are not fitting so well (read: threatening to cut off all blood flow to the lower extremities), and I have a trip coming up. I REALLY don’t want to:

A) Spend my entire 13 hour flight unable to feel my toes.
B) Star in an episode of “The Fat American Goes to Japan.”

Anyway, so by “Low Carb Diet” I mean that I eat cheese and bacon and pork rinds dipped in cheese and bacon all day, make everyone miserable with my miserable moaning and martyrdom, and then say, “Screw it!” at night and eat my way through the Halloween Candy. (Where ARE you candy fairy? Come get this stuff already!”) Then, I spend the next day feeling like a failure, eating meat dipped in cheese, only to later hide in the closet with an entire loaf of French Bread.

You think I’m kidding, don’t you?

So today, I decided to go ahead and start out the day with failure. It can only go up from there, right?

Easy Apple Pecan Sticky Buns.

Cut up one large Granny Smith (or other tart baking apple)
Toss it with 1/2 cup chopped pecans, 1/4 cup packed dark brown sugar and 2 Tbsp melted butter.

Put that mixture into 10 greased muffin tins, plop a refrigerated biscuit on top, and bake for10 minutes.

Flip it all upside down onto a platter, and eat as many as you can before the kids realize that breakfast is ready. If the little buggers don’t eat them all, they’re pretty good cold, while standing in the fridge, in the middle of the night, in a carb deprived “episode” as well… or so I’m told.

For dessert, (hey, if you’re going to blow the diet might as well throw in a dessert after breakfast right?) I think one of these is in order.

I think I’m going to have to buy bigger jeans.

You are a naughty naughty girl. Just buy the bigger jeans – better to be adorable and happy in bigger jeans than skinny and cranky in the smaller ones. And then you’ll have room for all the yummy food in Japan.

Your new header is too cute! Have you seen the recipe for cinnamon rolls on the pioneer woman cooks? Luckily for me (my thighs and my husband) the recipe makes too many. The neihbors though may have to watch out come December!

Oh my, it must have been cinnamon roll weekend– I whipped up some of my Grandma’s bread recipe and instead of making 4 loaves, I made 3 and used the extra dough for cinnamon rolls. 3 were eaten right out of the oven! (y’know, so hot you’re hissing and eating at the same time and burning the roof of your mouth). 9 left for breakfast… 5 of us ate 7 = 2 more for me later! Shhhhhh!

I agree with the rest of the gang, just buy the bigger jeans. All that yummy food in Japan will be hard to turn down!

Its the weekend. Low carb diet means low carbs on week days. Didn’t you know that?!!! Your banner made me chuckle out loud.

stef, this made me laugh out loud. :^) i had been in a really good place since summer and had lost some weight and was feeling really good .. then halloween came, and almost overnight (and three bags of mini butterfingers later) i was feeling puffy as a macy’s day balloon.

any time i focus on my weight i just gain and gain!

I’ve been putting off the getting (or making) of “bigger” clothes for a while. It really is so much less guilt to accept that there is too much yummy food out there. Japanese food is quite low carb, isn’t it. So maybe you’ll come home in the skinny jeans!
PS Domestic Goddess Nigella seems to be getting bigger and bigger – so we’re all with good company, hey!:)

Actually, if you don’t make a crust and use Splenda or Stevia for the sweetener, the cheesecake can become low-carb-ish. Good luck with your diet!! These sticky buns sound divine!

I love all that you are creating with your exacto knife. beautiful. And your header is very groovy.

I love sticky buns. I haven’t had them in a very long time. yumm.

And the halloween candy was the death of me! I finally sent it to the fire dept. The candy fairy took it….
