We all thought that it would be nice to be able to give something to EVERYONE for participating. My oldest said, "maybe we could send 'em all a ribbon or something?"
Well it's a nice thought, but it might pose some execution problems.
Instead, we thought we'd share our secret for two of our favorite quick breads… in keeping with the theme, you see.
One of the winners of my last contest told us about her family's "homemade bisquick." My little taste testers were immediate fans.
It goes like this: You just mix 10 cups of All Purpose flour (I changed ours to half whole wheat, half white flour),6 TBL of baking powder, 1 TBL salt ( or maybe a little less), then cut in 1 1/2 cups of shortening (I use the Spectrum Shortening now).
We've used it for biscuits and waffles and pancakes of course, but decided to do a little experimenting with it.
After some trial and error, we came up with a couple of great go-to recipes… Pumpkin Bread and Banana Bread, using our "Bisquick".
Pumpkin Bread:
1/3 cup Canola oil
1 cup pumpkin puree
1 egg
1/4 cup water
2 TBSP flax seed
1/2 cup honey
2 1/2 cups homemade (or store bought, if you must) Bisquick.
2 tsp ground cinnamon
and some "fun stuff" if you like, (try either 1/2 cup raisens or 1/2 cup dark chocolate chips and 1/2 cup pecans or walnuts)
Heat your oven to 325 F.
Mix the water and flax and allow to set.
Mix together the oil, pumpkin, egg and honey. Add in the flax/water mixture. Now add your cinnamon into the measured out Bisquick and mix, then fold that into the pumpkin/honey goo. At this point you can add in your "fun" ingredients, if you choose to.
Pour into a greased 9X5 pan and bake for 45 to 55 minutes or until a pick inserted in the center comes out clean.
And now for the Banana Bread:
In the above recipe, substitute about 3 good sized mashed ripe bananas for the pumpkin, 1 tsp vanilla for the cinnamon. The rest is exactly the same! Both of these recipes work great as muffins too.

oh, can I ask a question about the bisquick? How do you store it and how long does it last? Can you freeze it?

Hi Penny, not a bother at all, I should have included that!
We just store ours in a big container in the pantry, but then we go through it pretty quickly ( it lasts us 3-4 weeks tops).
I understand that you can also store it in the fridge, but I’m not sure about the freezer. Maybe try to freeze a little, wait a few days or a week or so, and then try to bake with it and see if it still works properly. It seems like it would be fine.
All of the ingredients are things that you can store in the pantry, so it seems like they’d be fine that way mixed together too, but I guess if you think you’re going to store it for longer than about a month, go ahead and put it in the fridge.
Thank you! and that makes sense, since you store the boughten kind of bisquick in the pantry, it makes sense that you would this too.

It worked! I made a loaf of your bread in my bread machine and it came out ok!
I used a 1/2 cup less flour (because my machine is small) and I used butter because I haven’t bought the shortening yet but it turned out alright. I’m going to work on tweaking it in the weeks to come but I think it’s going to be a good everyday bread for sure! It sliced up wonderfully!
I tried to make pumpkin butter also but it didn’t turn out too good. I’m not sure what I did wrong with that.
These recipes look great! I’m going to whip up some pumpkin bread later.

Hello Linn! So sorry, I should have made that clear for our international visitors…
Bisquick is a baking mix. You guys probably have some version of it… you can make biscuits (not what we call cookies… maybe you call them scones?) by just adding water or pancakes by adding water and egg. Does that ring a bell?

Made the pumpkin bread today. I actually made them into muffins. The kids LOVE them. I put regular chocolate chips int hem. It is very good. It was so easy that I am gonna make the banana tomarrow if no one eats the bananas.
Sounds scrumdiddlyumptious. Must make some and quick!
