Greens, Eggs and Ham

For I don’t know how many years, I’ve been rediscovering one of my all time favorite salads among the post Easter refrigerator surplus. I think the original recipe was maybe from Every Day Foods, but I’m not real sure.

If you’ve got a few leftover boiled eggs and some ham, I can’t recommend it enough. If you don’t have any eggs and ham… well go out and get some because you need to make this salad!

For two meal-sized salads you’ll need:

3 TBSP Olive oil
About half an onion, chopped
1 TBSP grainy mustard (I use Grey Poupon because it makes my children laugh)
1 TBSP white whine vinegar
Salt and pepper
About a cup and a half of diced ham
3-4 boiled eggs
3-4 radishes sliced very thin
Baby spinach

Heat the oil in a skillet and cook down the onions. Remove from heat and stir in the mustard, vinegar and sprinkle well with salt and pepper. Add in the ham and stir well. Put a generous helping of spinach on your plate and dollop on the ham/onion/dressing mixture. Add egg and radish and toss well.

I seriously could eat this every day, and I just might.

What are your favorite salads? I haven’t had the Napa Cabbage Salad in ages and I really loved that one. I seem to recall another old favorite that had pears and peppered pecans in it… I wonder if I can find that recipe? If I do I’ll share it.

Yum! That looks great. My favorite salad is probably Caesar (with Lily’s Caesar Dressing – if you haven’t tried it – you need to! Yum) I also love Caprese salad and any kind loaded with mayo (bahaha) – tuna salad, chicken salad, seafood salad, potato salad (are these really even salads?!)

I have NOT tried that dressing, but I will get some, stat!
And yea, I’m a big fan of all the “loaded with mayo” salads myself. … and the fruity ones that involve lots of whipped cream too 🙂

Years ago I was at my favorite farmstand and the lady who ran it was eating cucumber salad… “chopped cucumber, chopped tomato, a dollop of mayonnaise and a sprinkle of sugar” that’s how she told me to make it… it is still one of my favorites!

My all time, hands down fave is greek salad. You get a bunch of lettce, I like to use romaine, but honestly I just use whatever is in the fridge. Chop up about 4-6 garlic es and add some olive oil. Maybe 3 Tablespoons? Throw in some chopped cucumber, red onion, olives if you like em, and chopped tomato. Then toss the whole thing together. Holy cow. I love this salad, but be warned. You will have garlic breath afterwards.
